All of these combine to create a chocoholic’s dream: not just chocolate, nor double chocolate, or even triple chocolate.
Nope. We’re talking about QUADRUPLE Chocolate here.

Allow me to explain:

So what makes these healthy quadruple chocolate cupcakes so healthy? You’ll find no butter or oil in these little cakes, as well as no gluten, no dairy (if you use a dairy-free yoghurt), and no sugar! Yet you wouldn’t be able to tell, as they are so soft, spongey and chocolaty!

Instead of sugar, we use Vanilla Crème Stevia, which is a natural 0-calorie sweetener that is 300x sweeter than sugar! Can you guess how much we’ll use? 1 teaspoon. If you don’t have liquid stevia, no worries! You can just substitute 200 grams of muscovado sugar (or any unrefined sugar of choice).

You’ll mix the simple ingredients in one bowl, divide into cupcake cases, before dolloping some fudgy chocolate paste into the centre of each cupcake.

Then bake for 15 minutes in the oven…

Healthy Quadruple-Chocolate Cupcakes!

Prep Time: 25 minutes

Cook Time: 15 minutes

Total Time: 40 minutes

Yield: 12 cupcakes

Serving Size: 1 cupcake

Healthy Quadruple-Chocolate Cupcakes!

These Healthy Quadruple Chocolate Cupcakes are packed with antioxidants, and health-benefiting cocoa. They are gluten free, sugar free, and can be dairy free!

    For the Chocolate Cupcakes:
  • •5 tablespoons water
  • •40 g cocoa powder
  • •175 g Greek yoghurt
  • •3 eggs
  • •1 tsp vanilla creme stevia (or 1 tsp liquid stevia + 1 tsp vanilla extract)*
  • •50 g oats (gluten free if required)
  • •65 g gluten-free self raising flour blend
  • •1 tsp baking powder
  • •60 g (4 tbsp) chocolate chips
  • For the Chocolate Filling:
  • •2 tbsp cocoa powder
  • •1 tbsp Greek yoghurt
  • •1 tbsp milk
  • •1 tbsp maple syrup or honey
  • For the Chocolate Frosting:
  • •3 tbsp cocoa powder
  • •3 tbsp Greek yoghurt
  • •2 tbsp honey or maple syrup
  • •2 tbsp milk
  • •1/2 tsp vanilla extract

    To make the Chocolate Cupcakes:
  1. Preheat the oven to 180°C (160°C fan, 350°F, Gas 4). Place 12 cupcake liners into the cavities of a cupcake baking pan and spray with cooking spray to prevent the cupcakes from sticking to the cases.
  2. In a large mixing bowl, mix the cocoa and water to form a thick paste, before adding the yoghurt and eggs. Stir well, until no lumps remain. Add the vanilla creme stevia.
  3. Mix in the oats, then sift the flour and baking powder through a sieve, before gently folding into the mixture. Add 2 tbsp (30 g) chocolate chips, reserving the rest to place on top afterwards.
  4. Spoon the mixture into the cupcake cases, so that they are just over 3/4 of the way full.
  5. In a small bowl, ramekin or glass, stir together the 'Chocolate Filling' ingredients (keep stirring; it will eventually come together).
  6. 'Blob' 1 tablespoon of chocolate filling on the top of each cupcake, then top with the remaining chocolate chips (I put 5 chocolate chips on each cupcake).
  7. Bake at 180°C for 15 minutes, or until cooked through (if you test with a skewer, make sure you insert it into the chocolate cupcake, rather than the middle filling!
  8. To make the Chocolate Frosting:
  9. In a small bowl, stir all the chocolate frosting ingredients together. Spread on top of the cooled cupcakes.
  10. Store cupcakes in a sealed container in the fridge for up to 4 days (they are best on the first and second days, as the texture becomes more dense over time).

*Or you can use 200g muscovado sugar (or other sugar of choice).
