I’m pretty sure it’s supposed to be summer. The month is August, is it not? So why, then, am I seeing miserable grey clouds in the sky, and thousands of water droplets descending from them?☹
Despite the discouraging gloomy lighting, the soggy concrete and the constant pitter-patter of rain, I decided to post this Sunday recipe anyway and pretend that the weather is just as completely bright and beautiful as it was a couple of days ago.
Right then. Today’s recipe.
Creamy, soft ice cream…coated in a thin layer of chocolatey awesomeness that snaps as you take a bite…all of which is healthy.
First, I made some healthy vanilla ice-cream, using 1 banana, 1 can of coconut milk, 2 tbsp almond milk and 2 tsp vanilla bean paste. After pouring it into 4 ice lolly moulds, I left them in the freezer for about 3 hours.
As an experiment, I melted some coconut oil with cocoa powder and a bit of honey (which makes delicious healthy chocolate, by the way) and poured it over the lollies. This layer quickly froze on to the lollies, but I popped them back in the freezer for a couple of minutes to set. After adding another layer of chocolate, setting it in the freezer, I took a bite.
The chocolate snapped beautifully, and the ice cream was creamy and soft – just like the store-bought versions of these ice creams!
