A few years ago, I went on holiday to Guernsey Island for a few days in August. Sunshine beamed down on the golden sand of the beaches and the sapphire sea waves shimmered as they lapped gently at the shore. We walked along the seafront and inhaled the cool salty air, sand coating our feet like caster sugar coats warm, freshly-baked doughnuts😄.

Then we went over to an ice cream van, and stared in bewilderment at the range of flavours pictured on the side of the van. After a lot of ‘eeny meeny miny moe’, we eventually decided which flavour ice cream we would have. I chose coconut.

It was probably the best ice cream I had ever tasted. Beautifully coconutty, smooth, soft and sweet.

Of course, when we got back from our holiday, I wanted to buy some coconut ice cream right away! However, I couldn’t find any in the supermarkets – even online, they were either coconut fruit combo flavours, or ridiculously expensive!

Trouble is, ice cream is generally pretty unhealthy, right? So I kind of gave up on the idea. Until now.

This Coconut Ice cream is:

  • Cheaper & healthier than a store-bought coconut ice cream
  • Delicious!

Containing shredded coconut (desiccated, flaked etc. will also work!), dairy-free milk (coconut is best, but any milk works), maple syrup (or honey), and canned coconut cream/milk:

It takes me right back to that wonderful coconut ice cream in Guernsey – yet as an added bonus, this one’s healthier and cheaper!

Perfect for summer, this healthy coconut ice cream is quick and easy to make!

Healthy Coconut Ice cream: 4 ingredients!

Prep Time: 5 minutes

Cook Time: 4 hours

Yield: 5 scoops

Serving Size: 1 - 5 people

Healthy Coconut Ice cream: 4 ingredients!


  • •1 can coconut cream *
  • •120 g (1/2 cup) desiccated coconut **
  • •250 ml (1 cup) milk (any dairy free milk will work, but coconut is best!)
  • •2-4 tbsp maple syrup (or other runny sweetener)


  1. Place all ingredients in a blender and blend until smooth. (I had to blend it a few times to get it smooth, but it's okay to have some small coconut shreds in there for texture).
  2. Freeze for at least 4 hours.
  3. Leave to soften for about 20 minutes, then serve!


*You can use canned coconut milk - use the thick cream from it if you can, but it doesn't matter too much if some of the water goes in too.

** Shredded, flaked etc. will work too.

    Loved this! I’m not a big ice cream fan but this was delicious.
