Can you guess how much perfectly edible squash gets thrown away? 18,000 tonnes. Every. Year. That’s the same weight as 1,500 double-decker buses! Need a quick healthy snack that’ll boost your energy? These contain nut butter, pumpkin, oats, coffee, rice cereal (the last two of which are optional) and dark chocolate chips. All those ingredients combined will give you plenty of energy to keep you going until your next meal! And there’s no baking involved! Just mix the ingredients in a bowl, press into a flat tray, then refrigerate for half an hour while you clear up.

I even took these on holiday with me to snack on – keep them in a sealed container and they’re a perfect on-the-go treat!

To personalise these, you could add sultanas, shredded coconut, or even drizzle the bars with melted dark chocolate! Whatever. You. Like.😊

These no-bake Healthy Pumpkin Spice Latte Energy Bars are made in one bowl and ready in 30 minutes! It's gluten-free, vegan and refined sugar free! Perfect for when you're in need of a snack to boost your energy!

Ingredients

  • •200 g (2 cups) oats (gluten-free if needed)
  • •20 g (1/2 cup) rice krispie cereal (optional)
  • •100 g (1/2 cup) nut butter (I used peanut butter)
  • •200 g (1 cup) pumpkin puree (tinned, or pumpkin flesh whizzed in blender)
  • •60 g (1/4 cup) maple syrup OR honey
  • •1 tsp cinnamon (ground)
  • •1 tsp ginger (ground)
  • •1 tsp vanilla extract
  • •1 tsp coffee granules dissolved in 1 tbsp hot water (optional)
  • •2 tbsp dark chocolate chips (optional)

Instructions

  1. In a medium-sized bowl, combine all ingredients very well.
  2. Press into a flat baking tray, so that the thickness of the mixture is about half an inch.
  3. Refrigerate for at least 30 mins, then remove from fridge and slice into bars.
