Halloween is just around the corner now! Witches, Zombies and Vampires will be common, along with Werewolves, Skeletons and Ghosts. But best of all, there will be lots of sweet treats!
Of course, there’s also pumpkin carving – some people do some AMAZING designs! The other day, I read about just how many pumpkins are tipped straight into the bin every Halloween. Can you guess how much perfectly edible squash gets thrown away? 18,000 tonnes. Every. Year. That’s the same weight as 1,500 double-decker buses! And enough to make a lifetime supply of these healthy pumpkin spice latte energy bars…
Tinned pumpkin is so difficult to find over here in the UK, but luckily Ocado stocked some, so I bought 10 cans while I had the chance!!😁
Need a quick healthy snack that’ll boost your energy? These contain nut butter, pumpkin, oats, coffee, rice cereal (the last two of which are optional) and dark chocolate chips. All those ingredients combined will give you plenty of energy to keep you going until your next meal! Along with cinnamon, ginger and vanilla extract, maple syrup gives them a deliciously sweet flavour.
And there’s no baking involved! Just mix the ingredients in a bowl, press into a flat tray, then refrigerate for half an hour while you clear up.
Cut into bars…
…and that’s it!
So maybe you’ll use canned pumpkin puree like I did. Or perhaps you’ll carve your Halloween pumpkin, then whizz the flesh in a blender to make your own pumpkin puree! Either way, these healthy pumpkin spice latte energy bars are easy, quick, and perfect for Halloween.
I even took these on holiday with me to snack on – keep them in a sealed container and they’re a perfect on-the-go treat!
To personalise these, you could add sultanas, shredded coconut, or even drizzle the bars with melted dark chocolate! Whatever. You. Like.😊
