Healthy Peanut Butter Cake

On Tuesday, I was reading through Amanda’s “15 Quick & Healthy grab-n-go breakfasts” post on Running With Spoons (visit her blog – she’s got loads of great healthy recipes!) and decided that I should probably post a breakfast recipe of some sort!

There are so many options when it comes to deciding what you are going to eat first thing in the morning – sweet, savoury, fried, baked, toasted, refrigerated, frozen?

For today I picked this healthy peanut butter cake, which is baked:

I would just like to mention the wonderfully soft texture of this cake. As you cut the traybake into squares, small crumbs fall from the sides – just like with a ‘normal’ cake. But believe it or not, this breakfast cake is:

– Gluten free
– Refined Sugar free
– Dairy free
-Made without butter/oil
-Packed with protein (5 grams per slice)
-Substantial, leaving you full until lunch
-Can be eaten for Breakfast, Snack or Dessert

You won’t be able to tell – just look at the soft, cake-y texture!

Undetectable.

Because I used unrefined muscovado sugar (dark), I haven’t tried this recipe with honey, maple syrup or date syrup. I reckon they’ll work if you use the same amounts.

You could eat this as a snack, for dessert, or for breakfast – I ate a slice with some banana😍

Healthy Peanut Butter Cake

This Healthy Peanut Butter Breakfast Cake contains no butter/oil or refined sugar, and is gluten free, dairy free, and delicious! A great breakfast to leave you feeling pleasantly full until lunch - also a tasty snack or dessert!

Ingredients

  • •60 g (1/4 cup) nut butter (I used peanut)
  • •80 g (1/4 cup + 1 tbsp) plain yoghurt *
  • •100 g (1/2 cup) unrefined sugar (I used dark muscovado) **
  • •1 egg
  • •1/2 tsp vanilla
  • •120 g (1/2 cup) gluten free self-raising flour
  • •1/2 tsp baking powder
  • •pinch salt

Instructions

  1. Preheat the oven to 180°C and grease a 9x9inch baking pan.
  2. Mix nut butter, yoghurt and sugar in a large mixing bowl.
  3. Add egg and vanilla, mix until combined.
  4. Fold in flour, baking powder and salt.
  5. Pour into baking pan and bake for 30 minutes, or until golden.

Notes

*Dairy free if required

**Honey, maple syrup or date syrup may work as well (I haven't tested them)
