So, you throw open a cupboard, grab a large mug, followed by a spoon from the cutlery drawer. You chuck some pasta and water in the mug, then bung it in the microwave while you turn the TV on. (If you’re British, this might be a good time to set the kettle boiling for an afternoon cuppa.)

Once the beeper goes, you give it a quick stir and pop it back in for another minute. During this time, you grate a handful of cheddar.

Going back to the kitchen, the mug goes in the microwave for a final minute while you grab some cream cheese, herbs & spices.

Steam emerges from the microwave as you remove the mug. You stir in a dollop of cream cheese, some mayo, then the grated cheddar. With a sprinkle of coriander, turmeric and a pinch of paprika, you stir it all together.

Hopping onto the sofa, you grab a soft fluffy blanket and drape it over your legs. Your hand grips the handle of the warm mug, and the other hand scoops from inside the mug, a spoonful of cheesy pasta.

Ingredients

  • •50 g (1 cup) uncooked pasta, wholewheat or gluten-free (I used wholewheat)
  • •80 ml (1/2 cup) water
  • •45 ml (3 tbsp) Greek yoghurt
  • •30 g grated cheddar or feta
  • •optional: 1/2 tsp turmeric*
  • •optional: 1/4 tsp coriander
  • •optional: 1 tbsp cream cheese
  • •optional: 1 tbsp mayonnaise
  • •Other additions such as pre-cooked ham, chicken, peas, sweetcorn - I added canned tuna.

Instructions

  1. Put the pasta and water into a large mug and stir briefly. Microwave on full power for a minute. Remove and stir.
  2. Microwave on full power for another minute, then stir. Repeat until the water has been soaked up and the pasta is soft, cooked through.
  3. Now add the Greek yoghurt, cheese, spices/herbs and mayo. Mix well and microwave for another minute.
  4. Add other additions, mix well. Top with extra added cheese if desired.
  5. When cool enough, grab a fork and enjoy!

Notes

* As well as health benefits, turmeric gives the cheesy pasta a yellow colour, rather than white
