Earlier this week, I made a healthy chocolate cake, topping it with a chocolate buttercream frosting. Because I was sharing it with friends, I decided to top it with an extra indulgent frosting in order to ensure they would never guess that the actual cake was healthy (however I do recommend this healthy chocolate frosting)!

Including how long it took to bake and decorate, I probably spent about 2 hours on that cake.

Most cakes are relatively simple to make, however they do usually have quite a few ingredients. With some, you have to mix the dry ingredients in a separate bowl to the wet ingredients, before combining them – which means two bowls to wash afterwards! Healthy Lemon Drizzle Loaf Cake (Gluten free, 5 mins, 1-bowl)

Healthy Lemon Drizzle Loaf Cake (Gluten free, 5 mins, 1-bowl)

This Healthy Lemon Drizzle Loaf Cake is so easy & quick to make, and it's gluten free, refined sugar free, and can even be dairy free! Made with only 5 ingredients in one bowl, it'll be ready in under an hour!

Ingredients

    For the Cake:
  • •170g unrefined muscovado sugar*
  • •170g Greek yoghurt (or dairy-free alternative)
  • •3 eggs
  • •170g gluten free self-raising flour**
  • •1 tsp lemon extract
  • •(optional) zest of 1 lemon, finely grated (adds more lemon flavour!)
  • For the Lemon Drizzle:
  • •1 tbsp Greek yoghurt (or dairy-free alternative)
  • •1 tsp lemon juice
  • •1 tbsp honey or maple syrup OR 8 drops of vanilla creme stevia
  • •2 tsp plain gluten-free flour OR cornstarch OR potato starch OR buckwheat flour (OR icing sugar)

Instructions

  1. Pre-heat the oven to 180°C (160°C fan, 350°F, gas 4) and grease a 5x9inch loaf pan.
  2. In a large mixing bowl, combine the sugar, Greek yoghurt and eggs. Gently stir in the flour, followed by the lemon extract and the lemon zest (if using).
  3. Pour into the greased loaf tin, and bake for 45 minutes, or until a skewer inserted into the middle comes out clean.
  4. When finished, leave to cool in the loaf pan for 10 minutes, then transfer to wire rack to cool completely.
  5. Combine lemon drizzle ingredients in a small ramekin/bowl. Once the cake has cooled completely, pour the drizzle over the top of the cake, then slice and enjoy!
  6. - Yep, it's that easy!!

Notes

*Or light brown sugar or other unrefined sugar of choice will work. You can also use 3/4 tsp vanilla creme stevia, to make this sugar-free!

**Normal self-raising flour will work. I haven't tried this with wholewheat self-raising flour, but I'd imagine you would get a more dense, bread-like loaf cake.
