I’m pretty sure it’s supposed to be summer. The month is August, is it not? So why, then, am I seeing miserable grey clouds in the sky, and thousands of water droplets descending from them?☹

Despite the discouraging gloomy lighting, the soggy concrete and the constant pitter-patter of rain, I decided to post this Sunday recipe anyway and pretend that the weather is just as completely bright and beautiful as it was a couple of days ago.

Right then. Today’s recipe.

Creamy, soft ice cream…coated in a thin layer of chocolatey awesomeness that snaps as you take a bite…all of which is healthy.

First, I made some healthy vanilla ice-cream, using 1 banana, 1 can of coconut milk, 2 tbsp almond milk and 2 tsp vanilla bean paste. After pouring it into 4 ice lolly moulds, I left them in the freezer for about 3 hours.

As an experiment, I melted some coconut oil with cocoa powder and a bit of honey (which makes delicious healthy chocolate, by the way) and poured it over the lollies. This layer quickly froze on to the lollies, but I popped them back in the freezer for a couple of minutes to set. After adding another layer of chocolate, setting it in the freezer, I took a bite.

The chocolate snapped beautifully, and the ice cream was creamy and soft – just like the store-bought versions of these ice creams!

Healthy Ice Cream Lollies Covered in Chocolate!

These healthy ice cream lollies consist of: creamy, soft ice cream coated with a layer of healthy, indulgent chocolate. Paleo, Vegan, dairy-free and refined sugar free - they take 2 minutes to make, 5 hours in the freezer, and voila! Easy, simple, delicious.

Ingredients

    For the ice cream
  • •1 banana [optional] (I used a frozen banana. Omit for non-blender version)
  • •250 g [1 cup/cream from 1 can or carton] coconut cream*
  • •60 ml [1/4 cup] milk**
  • •2 tbsp runny sweetener of choice
  • •2 tsp vanilla bean paste or extract
  • For the chocolate coating
  • •3 tbsp coconut oil
  • •2 tbsp cocoa powder
  • •1 tbsp maple syrup (or other runny sweetener)

Instructions

    To make the ice cream
  1. If using banana, blend all ingredients in a blender. If not using banana, you can mix all the ingredients by hand in a bowl.
  2. Pour the mixture into 4 lolly moulds (I used BBQ skewers snapped in half as the sticks for the lollies) and freeze for at least 3 hours.
  3. To make the chocolate layer
  4. In a small pan over a low heat, gently melt the coconut oil. Add the cocoa powder and maple syrup, then stir.
  5. Take the ice cream lollies out of the fridge and run hot water over the outside of the moulds to free the lollies.
  6. Lift 1 lolly out of the mould, then put the rest back in the freezer.
  7. Over a bowl, pour the chocolate from the pan over the lolly, coating it. Place in bowl and pop in the freezer for about 5 minutes (meanwhile, repeat this with the other lollies).
  8. After 5 minutes, pour another layer of chocolate over each lolly, one at a time.
  9. Keep in the freezer - in a bowl or wrapped in cling film.

Notes

*You can use a vanilla yogurt, dairy-free if needed, if you don't like the subtle coconut flavour.

**Dairy-free milk will work.
