Every day for the past week, the weather outside has been wonderful! Blue skies with wisps of cloud, and the gorgeous golden glow of the sun gently warming the grass. My favourite weather – warm, but with a cool breeze and areas of shade. It most certainly feels like Spring now, with daffodils and an abundance of colourful flowers swaying slowly in the wind.

Looking out into the garden, I can hear birds chirping and the distant hum of a lawn mower. Leaves dance ever so slightly, showing some life amongst the over-all stillness outside.

So what better way to enjoy this glorious weather than with a healthy green smoothie!

Packed with goodness, we’ve got avocado, banana, apple, carrot and lettuce in the mix! You may be frowning at those 3 ingredients which you may not think belong in a smoothie. But by including carrot and lettuce, we’re getting some brilliant veggie nutrition in there without the extra sugars which would come from more fruits. Of course, fruit sugars are all natural – it’s just best to have a mixture of vegetables too, rather than just fruit!

I don’t know if you’ve heard, but apparently we’re now supposed to consume 10 fruits & vegetables a day! Having gone from 5, to 7, and now to 10, it is recommended that at least 5 of those are vegetables.
With our deliciously healthy green smoothie here, we’ve got vegetables: lettuce & carrot, as well as fruit: avocado, apple & banana. That’s 5 of your 10-a-day in just one smoothie!

It took me less than 2 minutes to peel a carrot, a banana and an avocado. Then I took a handful of lettuce, rinsed it, washed and cut an apple, then threw them in the blender.

And that’s it!

Healthy Green Smoothie

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 500 ml smoothie

Serving Size: x1 (500 ml) smoothie

This Healthy Green Smoothie is packed with goodness and perfect for Spring! Whipped up in under 2 minutes, it's quick, easy and healthy!

Ingredients

  • •1 banana
  • •1/2 avocado
  • •1 apple (peeled or with skin, your choice)
  • •1 small carrot (peeled)
  • •1 handful lettuce (washed)
  • •350 ml cold water

Instructions

  1. Place all ingredients in the container of a blender (I used a Nutri Ninja).
  2. Blend for about 1 minute, until smooth.
  3. Check consistency - it will be reasonably thick. If you prefer a thinner smoothie, add a little more water and pulse for another few seconds until desired consistency is reached.
