Whenever I’m baking, I’ll always taste a bit of the mixture before transferring it to the oven. It’s a necessity!

Now imagine that you’re really craving some cookie dough, but don’t want to have to make a whole mixture. So you open the fridge, take out your container of Healthy No-Bake Cookie Dough Bars, and enjoy a chewy, chocolatey treat right there and then!

That’s because you already made the mixture beforehand. A mixture which, may I add, is excellent for freezing and takes all of 2 minutes to defrost.

Grab a mixing bowl, throw in Greek yoghurt, a bit of butter (or coconut oil), some unrefined brown sugar and some maple syrup (or honey). Stir well, then add vanilla extract and a splash of milk.

This recipe uses oat flour, which is literally just powdered oats. I made my own by whizzing some gluten free oats in the blender for about a minute. Easy!

Add the oat flour, then chocolate chips, and stir until fully combined. Press into a square dish and refrigerate for 2-4 hours. There you have your healthy no-bake cookie dough bars!

I then melted some dark chocolate chips, added 1 tbsp coconut oil, and drizzled it over the top of the bars in the dish. After refrigerating for 1 hour, they were ready to be sliced and served!

  • •50 g Greek yoghurt or coconut oil
  • •20 g butter*
  • •50 g brown sugar
  • •50 g maple syrup
  • •1 tsp vanilla extract
  • •1 tbsp milk

  • •125 g oat flour

Notes

*This helps with binding and prevents sticking to the pan. Instead, you can use 20 grams of Greek yoghurt or coconut oil, or a dairy-free butter alternative.
