Healthy Chocolate Orange Bundt Cake

This Healthy Chocolate Orange Bundt cake is refined-sugar-free, can be gluten-free and dairy-free, and contains no butter/oil! Soft, chocolaty and fudgy, this delicious treat is easy to bake!

Ingredients

  • For the cake:
  • •90 g Cocoa powder
  • •200 g water
  • •280 g Greek yoghurt (or dairy-free alternative)
  • •450 g honey OR maple syrup (I used 200g unrefined muscovado sugar + 250g honey)
  • •5 eggs
  • •finely-grated zest of 1/2 an orange (optional)
  • •1 tsp orange extract
  • •1 tsp vanilla extract
  • •350 g wholewheat (or gluten-free) self-raising flour
  • •1/2 tsp baking powder
  • For the icing:
  • •2 tbsp cocoa powder
  • •5 tbsp Greek yoghurt (or dairy-free alternative)
  • •2 tbsp honey OR maple syrup
  • •1/2 tsp vanilla extract
  • •1/2 tsp orange extract

Instructions

  1. Preheat the oven to 180°C (160°C fan, 350°F, gas 4). Lightly grease a 25cm Bundt cake tin with butter or cooking spray.
  2. In a large mixing bowl, combine the cocoa powder and water until a runny paste is formed.
  3. Add the Greek yoghurt and stir, then the chosen sweetener (honey/maple syrup/unrefined sugar) and eggs; mix very well.
  4. Stir in the orange zest, orange extract and vanilla extract.
  5. Fold in the flour and baking powder, stirring gently until just combined.
  6. Pour into the greased Bundt tin, then place in oven. Bake for 45-50 minutes. (I baked mine for 46, for a softer, fudgier cake. Baking for 50 mins or longer will result in a spongier, less fudgy cake).
  7. Transfer to a wire rack and leave to cool.
  8. Cut, serve and enjoy!
