This healthy chocolate mug cake is gluten free, refined sugar free, eggless, and contains no butter or oil! It is so soft and cake-y that you would never be able to tell!
It’s yet another bright, sunny day in Britain, and I’ve almost forgotten what rain looks like! Blue skies and warm sun have dried up any remaining droplets of water, and the occasional cool breeze reassures you that you won’t die of heatstroke. Summer has definitely arrived, after what seemed like a whole month of rain! (I’ve probably jinxed it now – if it starts raining tomorrow, you can blame me.)
In fact, the weather has been so nice that I was able to camp in the garden for two nights!
And camping means marshmallows….
A soft, fudgy, warm, [very] rich, chocolatey cake…
All to yourself!
We’re all quite familiar with mug cakes now (if you’re not, welcome to the world of mug cakes! NOTE: You’ll never leave), and we’ve all seen a chocolate mug cake before – whether it’s a healthy chocolate mug cake or not. But why not add another one to the collection? It’s chocolate. Do we really need another reason?
When I found a clean-eating chocolate mug cake from Amy’s Healthy Baking, I was inspired to adapt my own version, with a few tweaks.
Instead of conventional flour, I have used buckwheat – my favourite flour!😃 As for the rest of the healthiness, to replace butter, this recipe uses Greek yoghurt which is high in protein and a lot better for us! Sugar has been swapped with maple syrup. Granted, maple syrup is still sugar, but there are so many benefits that come with it: lots of antioxidants, improved digestion, important vitamins and minerals, etc. Now compare that to normal sugar, which has no nutritional content whatsoever. Yep, maple wins!
With a few simple ingredients, 2 minutes and a microwave, this mug cake will certainly satisfy your chocolate craving, and it’s healthy! (which is always a bonus!😉) Eat it for breakfast or pudding (or lunch or dinner. I mean, come on, it’s the great outdoors – we’ve got to survive somehow!)
