When I woke up this morning, I decided to make a fruit smoothie – I would add pears, grapes, blueberries, banana, apple, then whizz it in the blender with some water. So, I trotted down the stairs, walked into the kitchen, opened the fridge and –
The packet of blueberries had gone. Remembering that I had used them up when I made this blueberry lemon pound cake the other day, I instead looked for the grapes. But my sister had eaten the remaining grapes yesterday!
Walking over to the other side of the kitchen, I peered at the fruit bowl and saw that there were no apples, no pears – just one lonely speckled banana.😒
Apparently the fridge needed re-stocking.
I resorted to: a carrot, half an avocado (the rest had gone a bit brown😑), a banana, a dash of orange juice, and some almond milk.
After blending it, I tasted the smoothie. Despite it not containing ANY added sugar, I thought it tasted a lot like carrot cake! Adding a teaspoon of cinnamon, I re-blended it, and this time it tasted just like carrot cake!
It was perfectly sweet enough for me, but you could always add a little maple syrup, a pinch of salt and even a tablespoon of cream cheese!
I topped it up with a little more milk at the end, but if you prefer a thick smoothie you can use less milk, or use more for a thinner smoothie.
I even had this for breakfast, with a ham and cheese omelet!

Ingredients
- •1 carrot (medium-sized)
- •1/2 an avocado
- •1 banana
- •300 ml - 500 ml milk*
- •1 tsp cinnamon
- •(optional) 50 ml orange juice (adds more flavour)
- •(optional) 1/2 tbsp maple syrup
- •(optional) pinch salt
- •(optional) 1 tbsp cream cheese
Instructions
- Peel the carrot and chop the ends off. Scoop the flesh out of the half avocado, peel the banana, and place all three into a blender.
- Add the milk, cinnamon, and optional ingredients if using.
- Blend until smooth, transfer to a large glass if you wish, top with cinnamon and enjoy!
Notes
*You can use a dairy-free milk, such as almond milk. Use less for a thicker smoothie, and more for a thinner smoothie.
