These Healthy Banana Muffins are quick and easy to make, and perfect for a grab-‘n’-go breakfast. Each contains 9 grams of healthy fibre, 4 grams of protein, and lots of nutritional vitamins and minerals. With options for whole-grain or gluten-free, dairy-free, low-sugar etc., there are only 140 calories per muffin!
It’s a new year – 2017! Many of us will have set New Year’s resolutions, with every intention of sticking to them!
Perhaps you’ve pledged to exercise three times a week, to spend less time in front of a screen, or to eat more healthily. Maybe you want to spend more time with family & friends, do more charity work, or study something new. Healthy Banana Muffins!
These soft, sweet little cakes are easy peasy to make. Half the ingredients are whizzed up in the blender, so you don’t even need to bother mashing the bananas!
Of course, I made some alterations to the classic banana muffin recipe.
By using Greek yoghurt instead of butter/oil, we’re adding more protein and a lot fewer ’empty’ calories!
With honey (or maple syrup) instead of refined sugar, there is good nutrition in these two runny, unrefined sweeteners.
For extra fibre, we’ll be using flaxseed and wholewheat flour – or you can use gluten-free flour to make these gluten-free!
Due to the Greek yoghurt, eggs and flaxseed, these muffins are high-protein. Additionally, they’re versatile, scrumptious, and packed with nutrition! This means they’re a perfect grab-n-go breakfast!
It’ll take you less than half an hour to make these healthy banana muffins.
