I had a bit of extra time on my hands this morning, so I decided to make an apple crumble for breakfast. Usually you’d think of apple crumble as a dessert (one I’d usually pick after a nice meal at a restaurant). But this wasn’t going to be any old pudding…

So I started thinking of different ingredients we would normally have for breakfast. I noted nut butter, Greek yoghurt and oats – in addition to the apples, of course! Surprisingly, it took just 20 minutes to make this Healthy Apple Crumble!

Not only does this recipe contain protein (from Greek yoghurt and nut butter), it also includes NO refined sugar, and NO butter/oil! Refined-sugar-free, you can make it either wholewheat or gluten-free!

Yet, it’s super delicious! In fact, I’d say it’s just as tasty and indulgent as a traditional apple crumble! Because of the protein & fibre, this will fill you up sufficiently and prevent hunger later on in the day.

First of all, we’ll peel and dice two apples, then place them in the bottom of a baking dish. After adding a drizzle of maple syrup and a sprinkle of cinnamon, that goes in the oven for 5 minutes.

This next step is optional. For extra protein and a delicious depth of flavour, I included a nut butter layer. Mix your chosen nut butter (I used peanut) with some milk and a drop of honey. Then spread it on top of the apple layer! Back in the oven it goes for another 5 minutes…

Finally, we’ll mix together some oats, self-raising flour (wholewheat OR gluten-free), Greek yoghurt and unrefined sugar (or honey). This will roll out like a dough, then we’ll place it on top of the other layers. Into the oven for another 10 minutes, then it’s ready!

Serve with a scoop of ice-cream (perhaps some frozen-banana ice-cream if you’re feeling extra healthy!).

Serving Size: 1/4 of whole Apple Crumble

This Healthy Apple Crumble is refined sugar free, can be wholewheat or gluten-free, with no butter/oil. Containing protein from Greek yoghurt and an optional nut butter layer, this is perfect for a hearty breakfast or an indulgent dessert!

Ingredients

    For the Apple Layer:
  • •2 apples
  • •3 tbsp maple syrup (OR honey)
  • •1 tsp cinnamon
  • •1/4 tsp ground cloves
  • For the Nut Butter layer (OPTIONAL):
  • •3 tbsp nut butter (I used smooth peanut butter)
  • •2-3 tbsp milk (or dairy-free alternative)
  • •1/2 tbsp honey (OR maple syrup)
  • For the Oat Crumble Pastry layer:
  • •1/2 cup (50g) oats*
  • •3 tbsp wholewheat self-raising flour (OR for gluten-free, use buckwheat flour or a gluten-free blend)
  • •4 tbsp Greek yoghurt
  • •1 tbsp unrefined light muscovado or brown sugar (OR honey OR maple syrup)

Instructions

  1. Preheat the oven to 180°C (160°C fan, 350°F, gas 4).
  2. Apple Layer:
  3. Peel the apples and dice into cubes. In a medium-sized deep baking dish (eg. 20cm square terracotta baking dish), toss the chopped apples with the maple syrup and spices.
  4. Place in the preheated oven for 5 minutes.
  5. OPTIONAL NUT BUTTER LAYER:
  6. While that's in the oven, in a small bowl mix 3 tbsp nut butter with 2 tbsp milk, and keep stirring (and adding a little more milk) until a smooth yoghurt-like consistency is formed. Add 1/2 tbsp honey (or maple syrup)
  7. Remove the dish from the oven, and with a spoon, plop the peanut butter in a layer as evenly as possible over the top of the apple layer. Spread slightly if possible, then pop back in the oven for another 5 minutes.
  8. Oat Crumble Pastry Layer:
  9. While that's in the oven, in a medium bowl mix the oats, flour, unrefined sugar (or maple syrup/honey) and Greek yoghurt. The consistency will become very thick, so then use clean hands to fold it together into a ball.
  10. Sprinkle flour onto a chopping board, plate or clean surface, then use your hands to flatten this oat 'dough' into a similar shape and size as the baking dish, so that it will fit over the top of the other layers. It should be no thicker than 1cm and no thinner than 1/2 cm.
  11. Remove the baking dish from the oven (after the 5 minutes).
  12. Carefully lift the flattened 'dough' with your hands, then lay over the top of the apple & nut butter layers. Sprinkle some oats and cinnamon over the top, then place back in the oven for 10 minutes.
  13. Remove from oven, serve 1/4 as a portion and top with a little vanilla ice-cream!
  14. Enjoy!

Notes

* I used rolled oats. (Make sure they are certified gluten-free if necessary)
