*I am aware that some people aren’t comfortable with using a microwave. Based on what I have researched, I am confident that microwave ovens are of no major threat to our health, as well as the fact that there are more micro-waves being emitted from mobile phones than from microwave ovens.

However, for the people who would rather use the oven, that’s totally fine as well! Just bake it for about 15 minutes at 180°C (160°C fan, 350°F, Gas 4). Besides, nothing beats baked apple pudding!

Ingredients

  • •2 tbsp buckwheat flour
  • •2 tbsp oats (gluten free if required)
  • •1 tbsp Greek yoghurt (or dairy free alternative)
  • •1 tbsp applesauce (or chopped/grated apple)
  • •1 tbsp maple syrup (or honey or muscovado sugar or other unrefined sugar)
  • •1 tsp caramel extract (or vanilla extract)
  • •3 tbsp milk
  • •1 tsp cinnamon
  • •(optional) 2 tbsp chopped or grated apple (peeled)
  • •1/4 tsp baking powder
  • •(optional) extra oats & cinnamon, to sprinkle on top

Instructions

  1. *FOR OVEN VERSION, PRE-HEAT OVEN TO 180°C (160°C FAN, 350°F, Gas 4).
  2. Place the flour, oats, Greek yoghurt, applesauce, maple syrup, extract, milk and cinnamon in a microwaveable large mug or small bowl. Mix thoroughly until smooth (should be a gloopy, thick liquid).
  3. If using an apple as well, peel it and dice about half of the apple into small cubes. Alternatively, grate the half of the apple. Stir the apple into the mug cake mixture.
  4. Sprinkle the extra oats & cinnamon on top, if you like.
  5. Microwave on medium power for 2 minutes.
  6. *OR: Bake in the pre-heated oven for about 15 minutes, or until cooked through, golden on top, and the top is springy to touch.
