The other day, I had just finished dinner and was pondering over what to eat for pudding. So, I walked over to the fridge, opened the door, and scoured the various items of food that sat staring blankly at me from the shelves. Grabbing a Greek yoghurt pot and the milk carton, I closed the door.

After that I consulted the cupboard, where rows of flour packets stood in a line below honey bottles and jars of nut butter. Seeing a packet of almond flour, I was inspired to create a new mug cake recipe…

This was such a scrumptious dessert – in fact, it was so delicious that I made it for breakfast two days later!

What’s more, this soft and spongy pudding is gluten free, refined-sugar free, made without oil/butter, and you could even make it dairy-free! Now, it does contain an egg, but you could leave that out and substitute 2 tbsp milk (dairy-free milk) instead. Of course it won’t be as fluffy and springy, but will still taste just as good!

This Healthy Almond Mug Cake is the perfect delicious dessert, snack or breakfast! It's gluten free, refined-sugar free, packed with protein (but no protein powder!), and can be dairy free. With a soft and fluffy texture, this easy mug cake is made in under 3 minutes!

Ingredients

  • •2 tbsp almond flour (ground almonds)
  • •3 tbsp gluten free self-raising flour*
  • •1 egg**
  • •1 tbsp Greek yoghurt***
  • •1 tbsp honey (or maple syrup or other runny sweetener of choice)
  • •1 tbsp milk***
  • •1 tsp almond extract
  • Optional Toppings:
  • •Scoop of ice-cream (I recommend using healthy banana ice-cream)
  • •Almonds
  • •Nut butter (namely, almond butter)
  • •Chocolate chips
  • •Banana slices

Instructions

  1. In a small-medium microwaveable bowl (the one I used has a height of 10cm and diameter of 12cm) or large mug, combine all ingredients until fully mixed.
  2. Microwave on full power for 2 minutes.
  3. Top with optional toppings, and enjoy!

Notes

*Or 2 tbsp buckwheat flour + 1 tsp baking powder. You can use normal self-raising flour if you don't need this to be gluten free.

**For vegan version, use 2 tbsp dairy-free milk instead. The mug cake won't be as spongy but will still taste delicious!
